Lava Cookie

Mandi in collaboration with Shagun, co-founder of The Brookie Co (@the.brookieco) brings you this decadent lava cookie recipe. Crisp on the outside, irresistibly gooey on the inside. Each cookie is filled with a molten center that oozes out with every bite, infused with our Unique Coffee Liqueur for a deep, rich flavour that beautifully balances sweetness with bold coffee notes. These are not just cookies, they’re an experience.

Ingredients

Cookie Dough –

  • 113g Butter
  • 100g Sugar
  • 50g Brown Sugar
  • 1Egg
  • 1 Tsp Vanilla Extract
  • 180g All Purpose Flour 1/2 Tsp Baking Soda
  • 1/4 Tsp Baking Powder

    Molten Center –
  • 75g Milk Chocolate
  • 75g Fresh Cream
  • 30ml Mandi Unique Coffee Liqueur 5g Butter

Method

Molten Center –

Melt chocolate and cream in a microwave for bursts of 30 seconds, stirring in between.

  •  Once melted, add Mandi Unique Coffee Liqueur and butter. Stir vigorously to combine.
  •  Cover and let set in the fridge for at least 4 hours.
  •  Once cooled, divide equally into 6 Truffles.

Cookie Dough –

  •  Mix softened butter, brown sugar and sugar until combined. Add the egg and vanilla extract, mix again to combine.
  •  Sift in flour, baking soda, baking powder. Gently mix until no more streaks of dry flour are visible.
  •  Divide the dough equally into 6 and stuff a truffle in each dough ball. (make sure it is covered properly with the dough)
  •  Chill in the refrigerator for at least 3-4 hours.
