Mandi Coffee-Chocolate Pound Cake

This delicious chocolate cake recipe is the courtesy of a renowned local (Panchkula, Chandigarh) home-baker Mrs. Preeti Gupta (@mato.gupta). Packed with bright orange zest, crunchy walnuts, and a mouth-watering coffee twist, it’s a perfect balance of flavors and textures that’s sure to delight!

Ingredients

  • Whole Wheat Flour – 1 Cup
  • Grounded Sugar – 3/4 Cup
  • Refined Oil/Butter – 1/2 Cup
  • Curd – 1 Cup
  • Baking Powder – 1/2 Tsp
  • Baking Soda 1/2 Tsp
  • Vanilla Essence 1/2 Tsp
  • Orange Zest – 1 Tsp
  • Cocoa Powder – 2 Tsp
  • Mandi Unique Coffee Liqueur – 50ml
  • Lukewarm Milk – 1 Cup
  • Walnuts – 1/2 Cup

Method

  • Pre-heat the oven at 180 degrees C for ten to fifteen minutes to save time. Prepare the batter till then.
  • To prepare the batter, mix whole wheat flour, grounded sugar, baking powder, baking soda and cocoa powder together and sieve them.
  • Take the sieved mixture and add curd, butter/refined oil, vanilla essence and Mandi Unique Coffee Liqueur to it. Mix all the ingredients well to make a consistent batter.
  • After mixing, slowly add lukewarm milk and keep mixing the batter while adding the milk.
  • Add orange zest and walnuts in the batter.
  • You can also add walnuts on the top of the batter to give them a nice look.
  • Prepare a greased tin, add the batter to the tin, bake it at 180degree C for 45 minutes.
  • Check for fluffiness during the baking process. You can also use a toothpick to check if the batter is done from the inside.

You can also use Mandi Unique Coffee Liqueur as a topping. Try soaking the baked cake slices in one or two tsps of liqueur and serve.
